Gruyère Grilled Cheese with Roasted Garlic

It has been a while since I posted a savory recipe. I’ve been meaning to share this simple yet amazing grilled cheese with you but I have always been too tempted to eat this right away before shooting any photos! Gruyere is one of my favorite cheeses because I love French onion soup. I am also a huge garlic lover so cheesy gruyere + sweet roasted garlic = perfection. This may not be a quick grilled cheese to make but I promise the roasted garlic is worth the wait. You can always make the roasted garlic and save it for later!

Roasted garlic is what makes this grilled cheese so special. There is somewhat of a wait time but it’s super easy I promise. Begin by peeling away all the outer layers of the garlic head. Then trim about 1/4 inch off the top of the garlic head so that all individual cloves are visible.

Then place the entire head of garlic in an aluminum foil that is large enough you can cover it up. Drizzle a couple teaspoons of olive oil over the garlic and spread evenly on every clove. Then cover the entire head of garlic with the aluminum foil.

A muffin pan is perfect for roasting garlic because it keeps each one in place and prevents the olive oil from spilling. If you don’t have a muffin pan simply put the aluminum wrapped garlic head on top of a baking sheet. Bake for about 35-40 minutes at 400F. If you have a bigger head of garlic, I would recommend increasing the baking time by 5-10 minutes. It will caramelize the garlic further making it softer and easier to spread on the sandwich.

Using an entire head of garlic for one grilled cheese sandwich may seem excessive but roasted garlic carries a much sweeter and milder taste than you would think. Trust me! The roasted garlic is ready once it looks caramelized and feels very soft. Use a fork to push the garlic cloves out of it’s skin and place them in a bowl.

Mash evenly so it becomes easy to spread.

Cut a thick slice of gruyere cheese (about 1/4 inch) and lay it on the bread of your choice.

Spread the roasted garlic over a thick slice of gruyere cheese.

In a pan over medium-low heat, melt 1 tablespoon of butter completely. Place the sandwich in the pan where the cheese is closer to the bottom of the pan. Cover the pan with a lid and cook for about 4 minutes or until the bread has turned golden brown. When ready, remove the sandwich from the pan and melt another tablespoon of butter before frying the other side of the sandwich.

This is the type of sandwich that you must enjoy immediately! That is why it look me this long to take pictures and post this recipe. For all garlic-lovers out there I am certain that you will fall in love with this grilled cheese!

Makes 1 sandwich

1 head of garlic
2 tsp olive oil
2 Tbsp unsalted butter, divided use
2 slices of bread
1 slice of gruyere cheese, about 1/4 inch thick

Roasted Garlic

1. Preheat the oven to 400F.

2. Peel away the outer layers of the garlic. Then trim the top off the garlic so that each individual clove is visible.

3. Place the head of garlic in an aluminum foil that is big enough to cover the entire head. Then drizzle a couple teaspoons of olive oil and spread evenly over each garlic clove.

4. Cover the entire head of garlic with aluminum foil and place on a baking sheet or in a muffin pan. Bake at 400F for 35-40 minutes.

Grilled Cheese

1. After the roasted garlic has slightly cooled, remove the garlic cloves from the head and place in a bowl. Mash the cloves until it becomes easy to spread.

2. Place a thick slice of gruyere cheese on top of a piece of bread. Then evenly spread the mashed garlic on top of the cheese.

3. In a pan over medium-low heat, add 1 tablespoon of unsalted butter and heat until the butter melts completely. Then add the sandwich on the pan and cover with a lid. Cook for about 4 minutes or until the bread has turned golden brown. Remove the sandwich, melt another tablespoon of butter on the pan and fry the other side of the sandwich.
