Looking for a cool summery side? Make this amazing BLT Pasta Salad! It is refreshing, flavorful and light. This side is perfect with grilled chicken, steak, or other seafood main dishes. It also works well for lunch when served with a panini or a grilled cheese. The avocados and cherry tomatoes keep this pasta salad moist while the bacon adds a smokey flavor. The tri color rotini makes this side very colorful and summery. If you plan on making this ahead, make sure to slice the avocados right before serving as they can brown overtime. If you are short on time, refrigerate the ingredients before making the pasta salad and try using microwavable bacon. Most people may think that microwavable bacon could be soggy but they actually turn out very crispy in minutes! Give it a try and you will not be disappointed. This pasta salad is not only a good side for lunch or dinner but also a nice snack to have in the fridge!
This recipe will yield more than the amount seen above. It should yield about 5-6 servings.
Makes about 5 servings
8 slices of bacon, chopped 1 inch size
1 box tri color rotini (12 oz)
1/2 c + 1 tbsp mayonnaise
1/2 tsp salt
1/4 tsp granulated sugar
1/2 tsp garlic powder
1/4 tsp white pepper
1/8 tsp dill (dried)
1/8 tsp basil (dried)
1 c cherry tomatoes, sliced
juice of a quarter of a lemon (about 2 tsp)
1 avocado, pitted and sliced
1. Cook the bacon slices until they are crispy. Chop bacon slices into 1 inch bits.
2. Bring a medium pot of water to boil with some olive oil and salt. Cook the pasta for 9 minutes or until al dente then strain the pasta and let it cool.
3. In large bowl, mix mayonnaise, salt, sugar, garlic powder, white pepper, dill and basil until well combined.
4. Slice cherry tomatoes into fourths and add into mixture.
5. Add lemon juice into the mixture and stir well until combined.
6. Mix in cooled pasta and bacon bits. Chill mixture in the refrigerator for about 1 hour.
7. Slice the avocado and add to mixture right before serving.
