Cheddar Biscuits

These cheddar biscuits are perfect sides for pastas, meatloaf, and many other main dishes. They remind me of cheddar bay biscuits they serve at Red Lobster. Soft inside and slightly crispy on the edges. The garlic butter and green onions add a good flavor to the biscuit. This recipe yields 8 biscuits so feel free to double the ingredients for a bigger party.

Mix the dry ingredients together in a large bowl and slice up the green onions and set aside. You want to use cold slices of butter to mix with the dry ingredients. Cutting the butter into thinner slices will make it easier to combine with the flour mixture. If you don’t have a stand mixer, use a spatula to press slices of cold butter against the dough until you have a mixture that resembles course crumbs.

Add the green onions and cheddar cheese once you have blended the butter into the mixture. Then pour half of the milk into the mixture and mix well before adding more as you may not need all of it.  The texture of the dough should not be too wet or sticky. I used about a 1/3 cup of milk to make these biscuits. You may need slightly more milk but no more than 1/2 cup.

Knead the dough 10-12 times then form it into a long rectangular shape.

Slice the dough into 8 pieces and form them into cubes.  Line these apart on a greased baking sheet and bake for 10 minutes at 450F. While the biscuits are in the oven, microwave 1 tablespoon of butter and mix in 1/2 teaspoon of garlic powder.  After 10 minutes, remove the biscuits from the oven and brush the top of each biscuit with garlic butter. Put the biscuits back in the oven to bake for another minute. You can cool these on a wire rack for a 1-2 minutes or serve immediately.

Makes 8 biscuits

1 c flour
1 Tbsp baking powder
1/4 tsp cream of tartar
1/2 tsp granulated sugar
1/4 tsp salt
1/4 c butter + 1 Tbsp butter
1 c cheddar cheese, shredded
1/4 c green onion, chopped
1/3 c milk
1/2 tsp garlic powder

1. Preheat the oven to 450F.

2. In a large bowl, mix together flour, baking power, cream of tartar, sugar, and salt.

3. Cut 1/4 cup of cold butter into 6 slices and blend them in with the dry ingredients to form course crumbs.

4. Pour in the chopped green onions and shredded cheddar cheese then mix until combined.

5. Slowly add half of the milk and mix thoroughly before adding the rest. The dough should not be too wet and sticky. If you need more milk add slightly more but no more than half a cup total.

6. Knead the dough 10-12 times then form the dough into a long rectangular shape.

7. Cut the dough into 8 pieces then line them apart on a greased baking sheet.

8. Bake them for 10 minutes at 450F. While the biscuits are baking, microwave 1 tablespoon of butter then mix in 1/2 teaspoon of garlic powder.

9. After 10 minutes of baking, remove from the oven and brush garlic butter on top of each biscuit. Bake for another 1 minute.

10. Place the biscuits on a cooling rack or serve immediately.

  1. OMGGG. These are amazing. You can’t have just one. I find most biscuits are way too dry, but these have such a moist and fluffy texture. I could eat these every day and not get sick of them.
